Sometimes there are those days you just need a cookie, and you need it fast!
Now, while I am a firm believer in the healing, restorative, peace-making, and happiness-inducing powers that can come from a good, home-made, warm cookie, I also know that there isn’t always time to go into full-scale ‘Suzy-Homemaker’ mode!
… We all have those days where, “Oh my gosh, it’s a quarter ‘til three and the kids will be home from school any minute and STARVING!”
… We all have the times where we’re up to our hips in squabbling little people and need a quick diversion program for them.
… There are the times where the whole team comes over after practice … unannounced.
…There are those days at work that NOTHING will redeem except plopping down on the couch with a couple of cookies, a glass of cold milk, and an episode of ‘Gilmore Girls’!
For days like this when you need a good, chewy, cookie and you need it right away, this recipe for Peanut Butter cookies is hard to beat.
They’re crisp on the outside, moist on the inside, and the chocolate chips raise them a notch higher. They’re also flour-less, so if ‘gluten-free’ is an issue for you, this recipe makes the grade. Best of all, you can go from concept to cookie in about fifteen minutes!
It’s hard to be grumpy when you’ve got cookie crumbs in your lap!

Super-Fast Flour-less Peanut Butter Cookies
adapted from “Young, Broke, and Hungry”
Preheat your oven to 350 degrees (really, do this first!)
Grease a baking sheet or line it with parchment paper.
Mix together by hand or in a stand mixer:
1 c peanut butter
¾ c dark brown sugar (light brown will work too)
1 tsp vanilla extract
1 tsp baking soda
½ tsp cornstarch
¼ c semi-sweet chocolate chips
Bake for 10 minutes
Let the cookies rest on the sheet for a few minutes before removing them to a rack to cool completely (except for the ones that you KNOW you’re going to eat straight out of the oven!)
